Exploring Food and Wine Complexity Through Chemical Markers of Processing and Storage

Emanuele Boselli
Free University of Bozen-Bolzano (Italy)

Abstract
Advanced chromatographic and mass spectrometric approaches are used to investigate the molecular complexity of food and wine, focusing on chemical markers of processing and storage. Selected applications highlight how these markers reveal technological transformations, product evolution, quality, and authenticity.
